I love "Sally's Baking Addiction" for most anything that I need and these are no exception. Her ideas about how to experiment with flavors and texture worked perfectly on these! Her secrets here are a surprise ~ no eggs and recommends that you press out as much of the pumpkin "juice" as possible. A winning combo for chewy morsels, not too sweet, slightly dense and wholly satisfying Chewy Pumpkin Chocolate Chip cookies!
I accidently added a whole can of pumpkin so I ended up with a huge batch. Then I made about 6 more times ~ the family is begging for mercy over here and can't eat any more so I have been sharing with friends and family!
